Sweet 'n' Sour Chicken

Ingredients:

  1. 8 - chicken breast tenders
  2. 2 tablespoons - olive oil
  3. 1/4 cups - brown sugar
  4. 1 tablespoons - cornstarch
  5. 1/2 teaspoons - salt
  6. 1/4 cups - rice vinegar or red wine vinegar
  7. 1 tablespoons - soy sauce
  8. 1 cans - crushed pineapple 12-16 oz.
  9. 1 - onion cut in large pieces
  10. 1 - red bell pepper sliced
  11. 1 - yellow bell pepper sliced
  12. - rice cooked, for serving with

Directions:

In a skillet, heat oil over medium-high heat, and add chicken tenders; cook 3-5 minutes on each side until lightly browned (optional to dredge in flour first). Remove chicken from skillet and set aside.
Reduce heat to medium. In skillet mix together brown sugar, cornstarch, salt, vinegar, soy sauce, and crushed pineapple and stir 'til combined. Add onions, bell peppers, and chicken and simmer 10-15 minutes until sauce thickens, vegetables are crisp-tender, and all is heated well.
Serve over rice.
