Ingredients:
- 1/2 cups - green bell pepper chopped
- 1/2 cups - yellow bell pepper chopped
- 1/2 cups - orange bell pepper chopped
- 1 cups - roasted red bell peppers drained, chopped
- 1 cans - black beans 15 oz., drained, rinsed
- 20 - halved grape tomatoes
- 1 bags - mixed salad greens rinsed, 1 lb.
- 2 tablespoons - fresh parsley chopped
- 1 teaspoons - minced garlic
- 1 teaspoons - dried basil
- 1 teaspoons - stevia
- 1 tablespoons - Worcestershire sauce
- 3 tablespoons - balsamic vinegar
Directions:
In a large bowl combine peppers, beans and tomatoes.
Combine dressing ingredients in a jar. Shake well. Pour over vegetables and gently toss.
Cover and refrigerate at least two hours (overnight is better!).
To serve, place mixed greens on salad plates and top with pepper/bean mixture. Enjoy!
