Sweet Balsamic Black Bean Salad

Ingredients:

  1. 1/2 cups - green bell pepper chopped
  2. 1/2 cups - yellow bell pepper chopped
  3. 1/2 cups - orange bell pepper chopped
  4. 1 cups - roasted red bell peppers drained, chopped
  5. 1 cans - black beans 15 oz., drained, rinsed
  6. 20 - halved grape tomatoes
  7. 1 bags - mixed salad greens rinsed, 1 lb.
  8. 2 tablespoons - fresh parsley chopped
  9. 1 teaspoons - minced garlic
  10. 1 teaspoons - dried basil
  11. 1 teaspoons - stevia
  12. 1 tablespoons - Worcestershire sauce
  13. 3 tablespoons - balsamic vinegar

Directions:

In a large bowl combine peppers, beans and tomatoes.

Combine dressing ingredients in a jar. Shake well. Pour over vegetables and gently toss.

Cover and refrigerate at least two hours (overnight is better!).

To serve, place mixed greens on salad plates and top with pepper/bean mixture. Enjoy!
