I used a pineapple & bacon smoked sausage the first time I made this, and it was a delicious mix of flavors.

- 1 cups - onion sliced
- 1/2 cups - green pepper thickly sliced
- 1/2 cups - red pepper thickly sliced
- 1 pounds - link sausage bias cut
- 1 1/4 cups - pineapple diced
- 3/4 cups - sweet and sour sauce
- 2 cups - white or brown rice cooked
Heat small bit of oil in large skillet over medium-high heat. Place sliced onion, green pepper and red pepper into skillet and cook until lightly browned and slightly tender; add sausage and cook for about 5 minutes or until sausage is heated through and started to brown. Stir in pineapple and sweet and sour sauce; turn heat down to low and simmer for 5-10 minutes or until heated through and flavors are blended. Serve over white or brown rice.
