Maria and I don't like the green peppers so we just eat the filling; Du does like the green peppers, so I usually just use one bell pepper.

Ingredients:
- 3/4 pounds - Ground Beef
- 1 whole - Onion, Small, diced
- 1 cans - Red Kidney Beans, drained 15 1/4 - 20 oz can (or use Mexican Style Chili Beans)
- 1 cans - Tomato Sauce 8 oz can
- 1/2 teaspoons - Sugar
- 1/4 teaspoons - Thyme leaves
- 1/8 teaspoons - Pepper freshly ground
- 1 1/2 teaspoons - Salt divided use
- 3 whole - Green Peppers, large
- 1 tablespoons - Cornstarch
- 2 tablespoons - Cheddar Cheese, shredded
Directions:
1 In a 3-quart saucepan over medium-high heat, cook ground beef and onion until mean is browned and onion is tender, about 10 minutes, stirring occasionally. Stir in kidney beans, tomato sauce, sugar, thyme, pepper and salt; heat to boiling. Reduce heat to low; cover and simmer 10 minutes to blend flavors.
2. Meanwhile, cut green peppers lengthwise in half; discard seeds. Place pepper halves in 12-inch skillet; add about 1/2 inch water and 1 teaspoon salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 5 minutes or until tender-crisp. Drain.
3. In cup, mix cornstarch and 1/2 cup water; gradually stir into meat mixture; cook over medium heat, stirring, until mixture is slightly thickened.
4. To serve, place peppers, cut-side up, on warm platter. Spoon meat mixture into green peppers; sprinkle with shredded cheddar cheese.
Makes 6 servings.
