Substitute raisins or chopped apples for the relish as other ideas for a crunchy, sweet twist to the tuna salad. I enjoy adding a little shredded cheese, too, but that is totally optional.

Ingredients:
- 1 cans - chunk light tuna in water drained
- 1 - egg hard-boiled, chopped
- 2 tablespoons - Miracle Whip or mayonnaise
- 1 tablespoons - sweet relish or raisins or chopped apples
- 1 tablespoons - shredded cheddar cheese optional
Directions:
Included in the cook time for this recipe is the time to hard-boil the egg (place egg in pan with water almost to cover, bring to a boil, and let simmer for 12 minutes; then run cool water over egg to cool, remove shell, and use pastry blender or fork to "chop" egg in preparation for tuna salad).
Stir together the drained tuna, chopped hard-boiled egg, Miracle Whip, relish, and cheddar cheese (if desired) until mixed well. Best to refrigerate 15-30 minutes to allow flavors to blend, but can be used immediately.
Serving ideas include topping crackers with cucumber slices, then a dollop of tuna salad, and some chopped tomato for appetizers or a brunch or luncheon treat. Make a sandwich on regular bread or get fancy with croissants, and add some lettuce and a slice of tomato.
