Sunshine Blueberry Loaf

Ingredients:

  1. 1/2 cups - melted butter or margarine
  2. 1 cups - sugar
  3. 3 - eggs
  4. 2 teaspoons - grated lemon rind
  5. 3 cups - flour
  6. 1 tablespoons - baking powder
  7. 1 teaspoons - salt
  8. 1/4 teaspoons - baking soda
  9. 1 1/4 cups - unsweetened orange juice
  10. 1 cups - fresh blueberries
  11. 1/2 cups - chopped walnuts (or other nuts)

Directions:

Heat oven to 350 degrees F.

Cream butter and sugar thoroughly. Blend in eggs and lemon rind.

Add the combined dry ingredients (flour, baking powder, salt and baking soda) alternately with orange juice, mixing well after each addition.

Fold in half of the blueberries and all of the nuts.

Turn batter into a greased and floured 9-by-5-inch loaf pan and pat remaining blueberries on top, embedding them partially in the batter; this ensures a uniform distribution of berries throughout the bread as it bakes.

Bake 1 hour and 15 minutes, with loaf pan centered in oven. Cool 5 minutes, then remove from pan.
