Ingredients:

  1. 2 1/2 cups - corn kernels
  2. 3 - large sweet peppers in 1-inch diced pieces
  3. 3 cloves - garlic chopped
  4. 1/2 cups - vegetable broth
  5. 1 teaspoons - salt
  6. 2 tablespoons - unsalted butter
  7. 1/2 cups - packed fresh basil chopped
  8. 1/4 cups - scallions sliced
  9. 1/4 teaspoons - pepper

Directions:

Combine corn kernels, sweet peppers, garlic, vegetable broth and 1/2 teaspon of salt in the base of a slow cooker. Cover and cook on high for 3 hours. Stir in butter until melted. Mix in basil, scallions, pepper and remaining 1/2 teaspoon salt before serving.
