Brief Description
I have quinoa in my apartment at all times, without fail. I put it in just about everything I make, but this is my default recipe when I just need something quick and simple to eat. It travels well, it's great cold or at room temperature, and it delivers a ton of protein. Love it!

Notes:
The measurements of the veggies are totally up to you – I tend to like more avocado and less onion, but it doesn't matter at all. Experiment!

Ingredients:
- 1 - large avocado diced
- 1/2 - red onion minced
- 1/2 cups - spinach shredded
- 2 - garlic cloves minced
- 2 tablespoons - lemon juice
- 2 tablespoons - olive oil
- 1/2 - quinoa uncooked
- 2 - small roma tomatoes diced
Directions:
Place uncooked quinoa in a medium saucepan with 1 cup water, and bring to a rolling boil. Reduce heat and cover, simmer for 15 minutes or until liquid is absorbed.
Remove from heat and set aside to cool.
In a large bowl, mix together tomato, avocado, onion, garlic, and spinach.
Add the quinoa (once mostly cooled), and mix together.
Mix in lemon juice and olive oil.
