Summer Crab Cakes

Ingredients:

  1. 3 cups - saltine cracker crumbs divided
  2. 2 - large eggs lightly beaten
  3. 1/2 cups - diced onion
  4. 3 tablespoons - mayonnaise
  5. 1 tablespoons - prepared mustard
  6. 2 teaspoons - lemon juice
  7. 1/2 teaspoons - salt
  8. 1/4 teaspoons - pepper
  9. 1/8 teaspoons - ground red pepper
  10. 1/4 teaspoons - hot sauce
  11. 1 pounds - fresh lump crab meat drained
  12. 2 tablespoons - butter
  13. 2 tablespoons - oil

Directions:

Stir together 2 cups of cracker crumbs with the next 9 ingredients (everything but the crab meat, butter and oil). Fold in the crab meat.

Shape into 16 small patties, and dredge them in the remaining cracker crumbs.

Melt butter and oil in a large skillet over medium-high heat. Add crab patties; cook about 3 to 4 minutes on each side.
