    8 medium zucchini’s 2 eggs, beaten 1 C cooked rice 2 C curd cottage cheese A little onion powder 2 T parsley flakes 1/2 t salt Dash of Tobasco sauce Slices American cheese Added by: Terri Nevins

Wash, trim ends and cut zucchini in half lengthwise. Parboil until tender crisp, drain. When cool, scoop out center pulp and arrange shells in buttered casserole dish. Chop pulp. Mix with beaten eggs, rice, cottage cheese, onion, parsley, salt and Tobasco sauce. Stuff shells. Bake at 375 degrees for 20 minutes. Cover with cheese slices. Put under broiler to brown.
