We prefer to use red, yellow and orange sweet bell peppers in this, but green would be fine too. This is a great make ahead meal. Follow directions through the assembly, refrigerate and bake the next day. I haven't tried freezing it, but I imagine it would probably do well.

Ingredients:
- 1 pounds - ground beef (ground turkey works well also)
- 2 - small bell peppers coarsely chopped
- 1 teaspoons - onion powder
- - salt to taste optional
- 3 cloves - minced garlic
- 2 cups - cooked brown rice
- 1 jars - pasta sauce (24 oz)
- 1 1/2 cups - reduced fat mozzarella cheese divided
Directions:
Preheat oven to 350.
Cook meat in frying pan until almost completely browned. Drain and rinse.
Place meat back in pan; add peppers, onion powder, salt and garlic cloves. Cook over medium-low heat until meat is completely cooked and peppers begin to turn tender.
In 2 1/2 quart casserole, stir together rice, pasta sauce and 3/4 c. cheese. Add beef mixture and stir until well combined. Sprinkle with remaining cheese.
Bake 25 min. or until heated through & cheese begins to brown. Let sit 5-10 minutes before serving.
