Stuffed Chicken Parmesan

Ingredients:

  1. 1/4 cups - Egg Product
  2. 1/2 cups - Stone-ground wheat crackers crushed
  3. 1/2 teaspoons - Pepper
  4. 1 cups - Pasta Sauce
  5. 1/4 cups - Shredded Mozzarella Cheese
  6. 6 - Boneless skinless Chicken breasts pound flat
  7. 1 boxes - Frozen spinach 10 oz, thawed and well drained
  8. 2 ounces - Neufchatel cream cheese softened
  9. 1/4 cups - Shredded Parmesan cheese
  10. 1 1/2 teaspoons - Dried basil leaves divided
  11. 1 cloves - Garlic finely chopped
  12. 6 - Boneless skinless Chicken breasts pound flat
  13. 1 boxes - Frozen spinach 10 oz, thawed and well drained
  14. 2 ounces - Neufchatel cream cheese softened
  15. 1/4 cups - Shredded Parmesan cheese
  16. 1 1/2 teaspoons - Dried basil leaves divided
  17. 1 cloves - Garlic finely chopped
  18. 1/4 cups - Egg Product
  19. 1/2 cups - Stone-ground wheat crackers crushed
  20. 1/2 teaspoons - Pepper
  21. 1 cups - Pasta Sauce
  22. 1/4 cups - Shredded Mozzarella Cheese

Directions:

Heat over to 375°
Spray 13x9 inch baking dish with cooking spray
In medium bowl, mix spinach, cream cheese, Parmesan cheese, 1/2 teaspoon basil and garlic until blended.
Spread 1 Tbsp spinach mixture over each chicken breast, then roll up tightly
In small shallow bowl, place egg product
In another small bowl, mix cracker crumbs, 1 tsp basil and pepper
Dip each chicken breast into egg and coat with crumb mixture
Place seam side down in baking dish
Bake uncovered 20 minutes
Pour pasta sauce over chicken and sprinkle with mozzarella cheese
Bake 10-15 minutes longer
