Strawberry & Quinoa Salad with Toasted Almonds

Ingredients:

  1. 2/3 cups - tricolor quinoa rinsed and drained
  2. 1 1/3 cups - water
  3. 1 cups - strawberries sliced
  4. 3 tablespoons - toasted silved almonds
  5. 2 - green onions thinly sliced
  6. 2 tablespoons - fresh lemon juice
  7. 2 tablespoons - extra-virgin olive oil
  8. 2 teaspoons - agave nectar (or honey)
  9. 1/4 teaspoons - salt

Directions:

1. Combine the quinoa and water in a medium saucepan set over high heat. Bring to a boil, cover and reduce the heat to low. Cook until all of the water is absorbed, 18 to 20 minutes. Spread the quinoa on a baking sheet and let cool.
3. Toss with the dressing. Serve.
The dressing:
1. In a small bowl, whisk together the lemon juice, olive oil, agave nectar and salt.
