Strawberry Pie

Ingredients:

  1. 1 1/2 cups - vanilla wafers finely crushed
  2. 1/3 cups - butter melted
  3. 1/2 cups - butter or margine
  4. 1 1/2 cups - powdered sugar
  5. 2 - eggs beaten
  6. 1 teaspoons - vanilla
  7. 1 1/2 cups - sweetened strawberry slices fresh or frozen drained
  8. 1 cups - heavy cream whipped or more than 1 cup

Directions:

Mix all but 2 tablespoons vanilla wafer crumbs with melted butter; press into buttered 9 inch pie pan. Chill until firm, about 40 minutes.

Cream butter and powdered sugar; add beaten eggs and vanilla. Beat until fluffy; spoon into crust. Fold strawberries (if frozen strawberries are used-- thaw and drain first) into whipped cream and spread over first mixture in crust. Sprinkle with reserved vanilla wafer crumbs. Refrigerate until firm, about 8 hours.
