Strawberry Nut Bread

Ingredients:

  1. 3 cups - flour
  2. 1 teaspoons - cinnamon
  3. 1 teaspoons - baking soda
  4. 2 cups - sugar
  5. 1 teaspoons - salt
  6. 2 cups - frozen or fresh strawberries thawed, mashed some
  7. 1 1/4 cups - oil
  8. 1 1/4 cups - pecans chopped
  9. 4 - eggs beaten

Directions:

In a large bowl, sift together flour, cinnamon, baking soda, sugar, and salt. Set aside.
In a separate bowl, combine the eggs, oil, strawberries and pecans, mixing well.
Make a well in the dry ingredients and pour in liquid mixture; stir just enough to moisten (Note - I add dry to wet ingredients in mixer and just put on stir).
Pour batter into two greased bread pans.
LET STAND 20 MINUTES BEFORE BAKING.
Bake at 350 degrees for 45-60 minutes (adjust time for your own oven; mine took 40 minutes).
Let cool for 5 minutes before removing from pan.
Freezes well.
