Ingredients:
- 5 tablespoons - butter divided use
- 6 cups - mini marshmallows divided use
- 6 cups - Rice Krispies or similar rice cereal
- 2 cups - freeze dried strawberries roughly chopped, crumbs included
- 1 cups - white chocolate chips
Directions:
Rub the inside of a 9-by-13-inch glass baking dish with 1 tablespoon of the butter.
In a very large microwave-safe bowl, heat 4 tablespoons butter and 4 cups of the marshmallows in the microwave on high for about 60-90 seconds; stir, and if not fully melted, cook for another 30-60 seconds. (If you prefer or don't have a large enough bowl, you can melt the mixture in a pan over low heat on the stovetop). Stir until smooth.
Immediately add rice cereal and mix to combine. Quickly mix in freeze-dried strawberries, white chocolate chips and remaining 2 cups marshmallows. Using a buttered spatula, spread into prepared baking dish.
Cover with plastic wrap and cool completely before cutting. Cut into rectangular bars or squares.
May be prepared 2 days ahead and stored in an airtight container.
