While cornbread is cooking, throw together a salad to serve on the side, for a quick complete meal.

Ingredients:
- 1 packages - taco seasoning mix or 1 Tbsp homemade taco mix
- 1 cans - 15 oz. tomato sauce
- 1 cans - 15-16 oz. pinto beans
- 1/2 cups - fresh, canned OR frozen corn kernels
- 1 cans - 4 oz. green chilies
- 1 packages - 8 oz. corn muffin mix
- 1 cups - grated cheddar or Mexican blend cheese for topping
- 1/4 cups - sliced green onions or parsley for garnish and topping
- 1 pounds - ground beef
Directions:
Brown the ground beef in a large skillet over medium-high heat. Drain fat.
Stir in taco seasoning mix, tomato sauce, pinto beans, corn, and green chilies. Bring to a boil. Reduce heat to low; cover and simmer for 10 minutes.
Prepare package of corn muffin mix according to package directions. Drop small spoonfuls of batter over top of meat mixture in skillet. Cover.
Cook over medium-low heat for 15 minutes or until corn bread is cooked through.
Sprinkle with grated cheese and green onions or parsley. Cover; cook over low heat until cheese is melted.
