Stir Fried Zucchini

Ingredients:

  1. 2 pounds - zucchinie about 3 med
  2. 1/4 cups - flour
  3. 1 teaspoons - salt
  4. 1/2 teaspoons - pepper
  5. 1/8 teaspoons - cayenne pepper
  6. 2 - eggs
  7. 2 tablespoons - lemon juice
  8. 1 1/2 cups - fine cracker crumbs
  9. 1/2 cups - butter
  10. 1 - lemon sliced for garnish

Directions:

Wash unpeeled zucchini trim off both ends. Cut into lengthwise quarters and then into strips about 2.5 in. long and .5 in thick. Combine flour, salt, and pepper on a sheet of waxed paper. Beat egg and lemon juice together in a bowl. Pour cracker crumbs on another piece of wax paper. Roll zucchini in flour mixture, then in egg, and then coat with crumbs. Saute in butter until brown on all sides, until tender. Add more butter if necessary. Drain on paper towel.
