Stir-Fried Tofu

Ingredients:

  1. 2 tablespoons - oil
  2. 8 pieces - mushrooms - fresh/dried dried-soaked & stem removed
  3. 1/2 pounds - baby bok choy trim, separate leaves, cut to 1"
  4. 1/2 cups - snow peas trim
  5. 1 tablespoons - garlic minced
  6. 1 packages - tofu - firm pat dry - cubed
  7. 3 tablespoons - teriyaki sauce - Yoshida's

Directions:

Heat 1 Tbsp oil in large skillet - moderate high, not smoking. Add mushrooms and saute, stir until golden brown (6 min). Transfer to bowl. Add 1/2 Tbsp oil, bok choy, peas and garlic to skillet - saute until crisp tender (3 min). Transfer to bowl.
Pat tofu dry and season - salt/pepper. Heat remaining 1/2 Tbsp oil in skillet. Add tofu and cook, turning once, until golden brown (5 min). Add 1 Tbsp teriyaki sauce, gently stirring (30 sec).
Transfer tofu w/sauce to plate. Return vegetable to skillet, add remaining 2 Tbsp, teriyaki sauce, cook (1 min).
Serve hot - alternating stacking tofu with vegetable mixture.
