St. John's Jug Muffins

Ingredients:

  1. 3 cups - flour
  2. 2 cups - whole wheat flour
  3. 5 teaspoons - baking soda
  4. 2 teaspoons - salt
  5. 2 cups - quick-cooking oats
  6. 2 cups - All-Bran cereal
  7. 1 cups - Raisin Bran cereal
  8. 1 cups - Grape Nuts cereal
  9. 1 cups - raisins
  10. 2 sticks - unsalted butter melted, cooled
  11. 1 quarts - well-shaken buttermilk
  12. 2 cups - sugar
  13. 1/4 cups - packed brown sugar
  14. 4 - eggs

Directions:

In a large bowl, whisk together flour, baking soda and salt; then stir in all cereals and raisins.

In another bowl, whisk together butter, buttermilk, sugars and eggs. Add cereal mixture and combine.

Fill greased muffin tins and bake at 350 degrees F until done (about 20 minutes).

Batter keeps for 1 month chilled in air-tight container.
