Springtime Spinach Casserole

Ingredients:

  1. 2 packages - 10 oz. frozen chopped spinach
  2. 2 cups - 1/2-inch carrot pieces
  3. 4 slices - bacon (optional) cut in half crosswise
  4. 2 tablespoons - flour
  5. 1 1/2 cups - milk
  6. 2 tablespoons - parmesan cheese
  7. 1 teaspoons - salt
  8. 1/2 teaspoons - celery seed

Directions:

Thaw and drain spinach; cook and drain carrots.

Place bacon slices flat in large skillet; fry until almost crisp. Immediately roll slices into curls and reserve.

Stir flour into pan drippings to blend. Gradually add milk and cook, stirring constantly, until thickened. Stir in cheese, salt and celery seed. Fold in spinach and carrots.

Turn into 1-1/2 quart casserole and bake at 325 degrees F for 25 minutes. Place bacon curls on top of casserole and continue baking another 5 minutes.
