Spring Vegetable Sauté

Ingredients:

  1. 1 pounds - Broccolini or broccoli florets
  2. 3/4 pounds - thin young green beans or French green beans
  3. 1/2 pounds - Fresh or frozen green peas
  4. 2 whole - Sweet red peppers seeded, cored, and sliced
  5. 1/2 - small onion peeled, sliced thinly, optional
  6. 3 tablespoons - Olive oil
  7. 4 cloves - Garlic chopped
  8. 1/4 teaspoons - Red pepper flakes
  9. 1/2 teaspoons - Salt
  10. - Grilled lemon slices optional

Directions:

Bring a large pot of lightly salted water to a boil. Add broccolini, green beans, peas and red peppers (and onions or other vegetables, if using others). Return to a boil and cook for 3 minutes; drain.

In a large skillet, heat oil over medium-high heat; add garlic and red pepper flakes. Cook for 30 seconds; add vegetables and cook, stirring frequently, for 4 to 5 minutes or until vegetables are tender. Season with salt.

Serve with grilled lemon slices or lemon wedges, if desired.
