Spring Salad with French Vinaigrette Dressing

Ingredients:

  1. 2 tablespoons - red wine vinegar OR sherry vinegar
  2. 1/4 teaspoons - sea salt
  3. 1 tablespoons - shallot finely minced
  4. 1 teaspoons - Dijon mustard (prefer Edmon Fallot)
  5. 6 tablespoons - to 8 Tbsp. olive oil
  6. 1/2 tablespoons - chopped fresh parsley
  7. 1/2 tablespoons - chopped fresh chives
  8. 1/2 tablespoons - chopped fresh thyme
  9. 1 heads - red leaf lettuce
  10. 1 heads - green leaf lettuce
  11. 1 heads - Boston lettuce
  12. 12 - radishes thinly sliced
  13. 1 packages - cherry tomatoes cut in half
  14. 1 packages - golden tomatoes cut in half
  15. - black pepper

Directions:

For Dressing:
Combine vinegar, shallots and salt. Let stand for 10 minutes. Mix in Dijon mustard until smooth. Slowly whisk in olive oil. Add parsley, chives and thyme.

For Salad:
Clean and dry vegetables. Toss together in salad bowl and drizzle with dressing.
