Spinach/Tomato Chicken

Ingredients:

  1. 1 1/2 pounds - boneless skinless chicken breasts
  2. 2 tablespoons - olive oil
  3. 1 cups - heavy cream
  4. 1/2 cups - chicken broth
  5. 1 teaspoons - garlic powder
  6. 1 teaspoons - italian seasoning
  7. 1/2 cups - parmesan cheese
  8. 1 cups - spinach
  9. 1/2 cups - sundried tomatoes halved

Directions:

-In a large skillet, add olive oil and cook the chicken on medium high heat until cooked.
-Remove chicken and set aside.
-Add the heavy cream, chicken broth, garlic powder, italian seasoning, and cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let simmer until spinach starts to wilt. Add the chicken pack to the pan.
-Serve over pasta if desired.
