Spinach Sausage Brunch Casserole

Ingredients:

  1. 1 pounds - Bulk Italian sausage
  2. 1 cups - Chopped onions
  3. 1 jars - 7-oz. mild roasted red peppers Drained
  4. 1 packages - 9-0z.Frozed chopped spinach Thawed;well-drained
  5. 1 cups - All-purpose flour
  6. 1/4 cups - Grated Parmesan cheese
  7. 1 tablespoons - Chopped fresh basil (1 tsp. dry can be substituted)
  8. 1/2 teaspoons - Salt
  9. 2 cups - Milk
  10. 8 - Eggs
  11. 1 cups - 4-oz. Shredded Provolone cheese

Directions:

1. Heat oven to 425 deg.
2. Grease 13X9-in. pan.
3. In large skillet, brown sausage & onions. Remove from skillet; drain on paper towels.
4. Arrange sausage mixture in greased pan.
5. Reserve half of red peppers for garnish; chop remaining red peppers. Sprinkle chopped red peppers over sausage mixture; top w/ spinach.

6. Lightly spoon flour into measuring cup; level off. In lrg. bowl, combine flour, Parmesan cheese, basil & salt.
7. In another bowl, combine milk and eggs; beat until smooth.
8. Add egg mixture to flour mixture; beat until well blended. Pour over spinach.

9. Bake at 425 deg for 20-25 min. or until knife inserted in center comes out clean.
10. Meanwhile, cut reserved red peppers as desired for garnish.
11. Sprinkle casserole w/ Provolone cheese. Add red pepper garnish to top.

12. Bake at 425 for an addl. 1-2 min. or until cheese is melted. Let stand 5 min. Cut into squares.
