Spinach Salad with Apricot Vinaigrette

Ingredients:

  1. 10 - baby spinach
  2. 1 pints - grape tomatoes halved
  3. 1/2 cups - dried apricot chopped
  4. 4 - crumbled feta or goat cheese
  5. 1 whole - ripe avocado peeled and diced
  6. 1/2 cups - toasted pecans
  7. 1/3 cups - vegetable oil
  8. 2 tablespoons - white wine vinegar
  9. 2 tablespoons - orange juice
  10. 2 tablespoons - apricot jam
  11. 1/8 teaspoons - salt
  12. 1/8 teaspoons - ground pepper

Directions:

For vinaigrette, add all vinaigrette ingredients to small bowl and whisk until well blended; set aside.
For salad, layer all salad ingredients in large bowl and toss to mix.
Drizzle vinaigrette over salad and toss to coat.
