Spinach Salad

Ingredients:

  1. 1 bags - fresh spinach, clean and crisp
  2. 1 - red onion thinly sliced
  3. 1 dozen - mushrooms sliced
  4. 5 slices - bacon fried crisp, chopped (fat reserved for dressing)
  5. 2 - boiled eggs chopped, for topping
  6. - Feta cheese for placing on top
  7. 1/2 cups - olive oil
  8. 1/2 cups - bacon fat
  9. 1/3 cups - balsamic vinegar
  10. 1/2 teaspoons - salt
  11. 1/2 teaspoons - pepper
  12. 1 teaspoons - dry mustard

Directions:

Mix together all dressing ingredients, shaking until combined well.

Toss together the spinach, onions, mushrooms, and bacon.

Heat dressing to a warm temperature (not hot) in microwave.

Toss salad with dressing, and top with Feta cheese and chopped egg before serving.
