Spinach Quiche

Ingredients:

  1. - 9-inch unbaked pie shell
  2. 1 - egg white slightly beaten
  3. 4 slices - bacon cooked, crumbled
  4. 1 1/2 cups - grated Swiss cheese
  5. 4 - eggs
  6. 1 cups - half-and-half OR light cream
  7. 1/4 teaspoons - salt
  8. 1/8 teaspoons - nutmeg
  9. - dash of pepper
  10. 1/4 cups - butter or margarine
  11. 1/2 cups - chopped onion
  12. 1 packages - 10 oz. frozen chopped spinach thawed, well-drained
  13. 2 tablespoons - chopped parsley
  14. 2 tablespoons - butter or margarine
  15. 1 cups - sliced onion rings

Directions:

Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.

Sprinkle grated cheese over pie shell.

In a medium bowl, whisk together the eggs, half-and-half, salt, nutmeg and pepper until just combined.

In 1/4 cup of butter, saute chopped onion until golden, about 5 minutes. Add spinach and parsley; mix well. Remove from heat. Turn into a large bowl.

Combine spinach and egg mixtures; pour into pie shell over grated cheese. Bake 45 to 50 minutes or until set in the center.

Meanwhile, in 2 tablespoons of butter or margarine, saute the sliced onion rings until golden. Remove from heat. Arrange onion rings around edge of quick, overlapping slightly.
