Ingredients:
- - 9-inch unbaked pie shell
- 1 - egg white slightly beaten
- 4 slices - bacon cooked, crumbled
- 1 1/2 cups - grated Swiss cheese
- 4 - eggs
- 1 cups - half-and-half OR light cream
- 1/4 teaspoons - salt
- 1/8 teaspoons - nutmeg
- - dash of pepper
- 1/4 cups - butter or margarine
- 1/2 cups - chopped onion
- 1 packages - 10 oz. frozen chopped spinach thawed, well-drained
- 2 tablespoons - chopped parsley
- 2 tablespoons - butter or margarine
- 1 cups - sliced onion rings
Directions:
Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.
Sprinkle grated cheese over pie shell.
In a medium bowl, whisk together the eggs, half-and-half, salt, nutmeg and pepper until just combined.
In 1/4 cup of butter, saute chopped onion until golden, about 5 minutes. Add spinach and parsley; mix well. Remove from heat. Turn into a large bowl.
Combine spinach and egg mixtures; pour into pie shell over grated cheese. Bake 45 to 50 minutes or until set in the center.
Meanwhile, in 2 tablespoons of butter or margarine, saute the sliced onion rings until golden. Remove from heat. Arrange onion rings around edge of quick, overlapping slightly.
