    *The original recipe says this makes one quiche, but I found once I added more spinach and the turkey sausage, it easily made two. Once cooled, you can wrap the quiche tightly in plastic wrap, place it in a gallon freezer bag, and freeze it for a couple of months. To serve it again, I simply thaw it in the refrigerator and either heat the entire quiche in the oven until warm, or cut a slice out and microwave it for a quick kids' breakfast.

Ingredients:

  1. 2 - prepared 9-inch pie crusts pre-bake according to package directions
  2. 4 - eggs
  3. 3/4 cups - milk
  4. 1 tablespoons - chopped fresh parsley
  5. 1 teaspoons - miched garlic
  6. 1/2 teaspoons - salt
  7. 1/2 teaspoons - ground black pepper
  8. 1/8 teaspoons - ground nutmeg
  9. 1 tablespoons - unsalted butter
  10. 10 ounces - chopped frozen spinach, thawed and squeezed dry
  11. 8 ounces - package sliced fresh mushrooms
  12. 1/2 - yellow onion, diced
  13. 4 ounces - crumbled feta cheese
  14. 8 ounces - shredded swiss cheese, divided
  15. 1 pounds - sweet or hot turkey sausage, ground

Directions:

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a saute pan, add the ground turkey and cook over medium heat until browned all the way through. Drain and remove to a plate.
3. In the same saute pan, melt the butter. Add onions and mushrooms, and saute until softened. Add garlic and saute for 30 seconds or until fragrant. Add in the spinach and cooked ground turkey and stir until combined. Let mixture cool to room temperature.
3. Whisk eggs, milk, parsley, salt, black pepper and nutmeg together in a bowl.
4. Spread half of the turkey-spinach-mushroom mixture in the bottom of one prepared pie dish; top with half of the feta and a quarter of the Swiss cheese. Repeat with the second prepared pie dish.
5. Pour half the egg mixture evenly over the first filling, swirling egg mixture in bowl to spread seasonings through the eggs; top the quiche with half of the remaining Swiss cheese. Repeat with the second filling and place both quiches on a baking sheet.
6. Bake in preheated oven until the quiches are lightly puffed and browned, 45 to 50 minutes. A toothpick inserted into the center of the filling should come out clean. Cool for 30 minutes before serving.
