Spinach & Mushroom Manicotti

Ingredients:

  1. 1 packages - Barilla Manicotti (8 oz)
  2. 2 tablespoons - EVOO
  3. 6 - mushrooms chopped
  4. 1 cloves - garlic minced
  5. 1 bags - spinach (6 oz) chopped
  6. 2 - eggs
  7. 1 containers - Ricotta cheese (15 oz)
  8. 1/3 cups - basil leaves chopped
  9. 1 teaspoons - salt
  10. 1 jars - pasta sauce (26 oz)
  11. 1/2 cups - Parmesean grated

Directions:

Preheat oven to 350.

Cook manicotti for 7 minutes - drain, rinse and set aside.

Heat oil in large skillet over medium heat. Add mushrooms and garlic. Saute for 5 minutes stirring occassionally. Stir in spinach and continue cooking for 5 minutes. Set aside.

Beat eggs. Stir in ricotta, basil and salt. Put into mushroom mixture.

Spread 3/4 of pasta sauce in bottom of 13x9 pan.

Fill Manicotti with the mushroom mixture and put in pan. Pour remaining pasta sauce over and sprinkle with cheese.

Cover with foil and bake for 30 minutes. Uncover and bake 5-10 more.
