Ingredients:
- 2 tablespoons - olive oil
- 1/2 cups - flour
- 1/2 cups - milk
- 3 - eggs
- 1/2 teaspoons - salt
- 1/2 teaspoons - pepper
- 1/2 cups - chopped spinach
- 1/2 cups - grated cheddar cheese
- 1/2 cups - roasted cherry tomatoes and garlic
- 1/2 cups - wilted spinach
- 2 slices - bacon cooked, crumbled
Directions:
Place olive oil in large ovenproof skillet in cold oven; preheat oven to 425 degrees F.
Meanwhile, in a bowl, whisk together flour, milk, eggs, salt and pepper. Stir in chopped spinach. Pour batter into hot skillet, and bake for 20 minutes.
Cook bacon, wilting the spinach in the leftover bacon grease. Prepare cherry tomatoes and garlic for roasting (place on a small baking dish, drizzle with olive oil, and allow to roast in oven during last 5 minutes of Dutch baby cook time).
Sprinkle with cheddar cheese and place back in oven to bake 5 more minutes or until puffed and golden. Place tomatoes and garlic into oven at this time, for the final 5 minutes of cooking.
Top Dutch baby with roasted tomatoes, garlic, wilted spinach, and crumbled bacon.
Serve warm.
