Ingredients:
- 2 pounds - chicken breast or strips (or one of those bags of frozen chicken)
- 1 packages - frozen chopped spinach thawed and very well drained, about 16 oz.
- 1 jars - (about 15 ounce) marinated artichoke hearts chopped
- 1 packages - cream cheese (8 oz.)
- 1/2 cups - Parmesan cheese
- 1/2 cups - Mozzarella Cheese
- - Garlic powder, salt, pepper
Directions:
Chop chicken into bite sized pieces, season with garlic, salt and pepper and place in crock pot for 2 hours (on high) or 4 hours (on low) - time can vary by crockpot. (Or if you don't have a crockpot, bake in the oven at 400 for about 30 minutes).
When chicken is almost cooked, add the well drained spinach, can of artichoke hearts, cream cheese, and parmesan cheese; stir to combine well.
Cook for another hour (on low) (or if using oven, bake for about 20 more minutes) until cheeses are well melted; stir occasionally to incorporate flavors.
Top with mozzarella cheese and serve.
