Spinach and Walnut Souffle

Ingredients:

  1. 2 tablespoons - minced onion
  2. 1/4 cups - butter
  3. 1 packages - 10 oz. chopped frozen spinach cooked, drained
  4. 3/4 cups - chopped walnuts
  5. 3 tablespoons - flour
  6. 1/2 teaspoons - paprika
  7. 1/2 teaspoons - nutmeg
  8. 1 teaspoons - seasoned salt
  9. 1/2 cups - beef broth
  10. 1/2 cups - evaporated milk
  11. 3 - eggs separated

Directions:

Saute onion in butter; remove from pan. Turn onion, spinach and walnuts into blender container; blend until smooth.

Stir flour and seasonings into butter until smooth. Add broth and milk and cook until thick and smooth. Add spinach mixture and heat to boiling.

Add small amount of hot mixture to slightly beaten egg yolks; return to pan and mix well.

Beat egg whites until stiff. Fold whites into spinach mixture.

Turn into buttered souffle dish. Set in shallow pan of water. Bake at 325 degrees F 1 hour or until set.
