Spicy Prawn Skewers with Island Salad

Ingredients:

  1. 2 - lemons
  2. 1 - inch piece of fresh root ginger
  3. 3 cloves - garlic
  4. 1 - fresh ripe mango
  5. 14 ounces - cherry tomatoes
  6. 1 - red onion
  7. 2 tablespoons - paprika
  8. 2 tablespoons - mild chili powder
  9. - salt and freshly ground black pepper
  10. 24 - raw shrimp
  11. - handful of fresh cilantro
  12. 3 tablespoons - white wine vinegar

Directions:

1. Juice the lemons. Peel and grate the ginger. Peel and crush the garlic. Peel and cube the mango, tomatoes and onion. Cover and chill until ready to use. Finely chop the cilantro.

2. Mix together the lemon juice, ginger, garlic, paprika and chili powder in a bowl. Season well. Add the shrimp and stir to combine. Cover and leave to marinate in the fridge for 1-2 hours.

3. When ready to cook, thread the shrimp on to 8 metal or pre-soaked bamboo skewers. Heat the griddle pan and add the shrimp skewers. Cook for a few minutes on each side, turning occasionally, or until they are cooked through.

4. Meanwhile, mix together the cilantro and vinegar for the dressing. Season well and pour over the salad. Serve immediately with the prawn skewers.
