Ingredients:
- 2 - bay leaves
- 2 teaspoons - salt
- 1/2 teaspoons - cayennne pepper
- 1 teaspoons - pepper
- 1/2 teaspoons - cumin
- 1/2 teaspoons - nutmeg
- 4 tablespoons - unsalted butter
- 3/4 cups - diced onion
- 1/2 cups - diced celery
- 1/2 cups - diced green pepper
- 1/4 cups - minced green onions
- 2 teaspoons - minced garlic
- 1 teaspoons - hot sauce
- 1 tablespoons - Worcestershire sauce
- 1/2 cups - evaporated milk
- 1/2 cups - ketchup
- 1 1/2 pounds - ground beef
- 1/2 pounds - ground pork
- 2 - large eggs slightly beaten
- 1 cups - dry bread crumbs
Directions:
Combine seasoning ingredients; set aside.
Melt butter in a one quart saucepan over medium heat; add onions, celery, pepper, green onions, garlic, hot sauce, Worcestershire and seasoning mix.
Sauté until mixture starts sticking excessively, about 6 minutes. Stir occasionally and scrape bottom well; add milk and ketchup. Continue cooking for 2 more minutes. Remove from heat and allow to cool to room temperature.
Preheat oven to 350 degrees F; place beef and pork in a large bowl. Add eggs and cooked vegetable mixture, removing bay leaves. Add bread crumbs, mixing by hand until thoroughly mixed.
Form mixture into a large loaf; place in a roasting pan with a rack. Reshape the loaf to 12-x-6-inches. Bake uncovered for 25 minutes; raise heat to 400 degrees F and continue baking for 35 minutes or until done.
Allow to rest a few minutes before slicing.
