Ingredients:

  1. 2 - bay leaves
  2. 2 teaspoons - salt
  3. 1/2 teaspoons - cayennne pepper
  4. 1 teaspoons - pepper
  5. 1/2 teaspoons - cumin
  6. 1/2 teaspoons - nutmeg
  7. 4 tablespoons - unsalted butter
  8. 3/4 cups - diced onion
  9. 1/2 cups - diced celery
  10. 1/2 cups - diced green pepper
  11. 1/4 cups - minced green onions
  12. 2 teaspoons - minced garlic
  13. 1 teaspoons - hot sauce
  14. 1 tablespoons - Worcestershire sauce
  15. 1/2 cups - evaporated milk
  16. 1/2 cups - ketchup
  17. 1 1/2 pounds - ground beef
  18. 1/2 pounds - ground pork
  19. 2 - large eggs slightly beaten
  20. 1 cups - dry bread crumbs

Directions:

Combine seasoning ingredients; set aside.

Melt butter in a one quart saucepan over medium heat; add onions, celery, pepper, green onions, garlic, hot sauce, Worcestershire and seasoning mix.

Sauté until mixture starts sticking excessively, about 6 minutes. Stir occasionally and scrape bottom well; add milk and ketchup. Continue cooking for 2 more minutes. Remove from heat and allow to cool to room temperature.

Preheat oven to 350 degrees F; place beef and pork in a large bowl. Add eggs and cooked vegetable mixture, removing bay leaves. Add bread crumbs, mixing by hand until thoroughly mixed.

Form mixture into a large loaf; place in a roasting pan with a rack. Reshape the loaf to 12-x-6-inches. Bake uncovered for 25 minutes; raise heat to 400 degrees F and continue baking for 35 minutes or until done.

Allow to rest a few minutes before slicing.
