Spicy Chicken, Spinach and Potato Curry

Ingredients:

  1. 1 - onion peeled, finely chopped
  2. 1 3/4 pounds - skinless, boneless chicken breasts or thighs cut into bite size pieces
  3. 4 - large potatoes peeled, cut into bite size pieces
  4. 1 cups - baby leaf spinach roughly chopped
  5. 2 tablespoons - curry powder
  6. 1 cans - diced tomatoes
  7. - salt and pepper
  8. - handful of chopped cilantro and mint

Directions:

1. Place a large, non-stick frying pan over medium heat. When hot, add the onion, chicken, potatoes, spinach and curry powder and stir to mix well. Stir-fry for 2-3 minutes.

2. Add the diced tomatoes and 1-3/4 cups of water and bring to a boil. Cover, reduce heat to low and cook gently for 25-30 minutes or until the chicken and potatoes are cooked through and tender.

3. Remove from heat and season well with salt and pepper. Stir in chopped herbs and serve immediately.
