It's enough for one package of pasta - I made it with spelt penne and added roasted cauliflower and pine nuts sprinkled on top and parsley for a garnish. I think it could be great with meatballs though! Or boring veggies. Or even made thicker as a soup....? Yum. Enjoy!

Ingredients:
- 2 whole - beets (for roasting)
- 2 sprigs - sage
- 1 whole - hot pepper (depends on how hot it is)
- 1 whole - white onion cut into 1 inch pieces
- 2/3 cans - coconut milk/cream
- 1 whole - lemon (for lemon juice) You may need 2, depending on how juicy or spicy the pepper
- 3 tablespoons - brown sugar Or less. To taste.
- 1 heads - garlic (for roasting)
Directions:
In true Anat spirit, I made this up and it came out amazing! Enjoy :)
1. I peeled, sliced, olive oiled and roasted 2 beets in the oven, along with a head of garlic.
2. I took the roasted garlic out of the peel, put it in the blender with beets, a few sage leaves, the hot pepper (not roasted) and the coconut cream milk. You may need to add a little water or olive oil or more coconut milk for consistency, but it should be relatively thick.
3. Heat up oil or butter in a pan with a few more sage leaves. Once they are translucent, add the sauce from step #2. Stir. Add a bit of water to thin and bubble.
4. Add lemon juice, brown sugar, salt, black pepper to taste.
