Ingredients:
- 1 - carrot chopped
- 3 1/2 ounces - potato peeled, chopped
- 1 - red onion finely chopped
- 1 - red chili pepper deseeded, finely chopped
- 3 1/2 ounces - canned mixed beans drained, rinsed
- 1 - egg
- 2 teaspoons - ground cumin
- 4 tablespoons - finely chopped cilantro
- - salt and pepper
- - Pam cooking spray
Directions:
Place all ingredients in a food processor; season well and blend until well combined. Transfer into a bowl and chill for 3-4 hours or overnight.
Preheat oven to 180 degrees C or Gas 4 or 350 degrees F. Divide the bean mixture into two portions and shape each into a burger. Place on a baking tray lined with baking parchment; spray with Pam and cook for 12-15 minutes or until golden.
Serve with Slimming World fries.
