Spicy Beanburgers

Ingredients:

  1. 1 - carrot chopped
  2. 3 1/2 ounces - potato peeled, chopped
  3. 1 - red onion finely chopped
  4. 1 - red chili pepper deseeded, finely chopped
  5. 3 1/2 ounces - canned mixed beans drained, rinsed
  6. 1 - egg
  7. 2 teaspoons - ground cumin
  8. 4 tablespoons - finely chopped cilantro
  9. - salt and pepper
  10. - Pam cooking spray

Directions:

Place all ingredients in a food processor; season well and blend until well combined. Transfer into a bowl and chill for 3-4 hours or overnight.

Preheat oven to 180 degrees C or Gas 4 or 350 degrees F. Divide the bean mixture into two portions and shape each into a burger. Place on a baking tray lined with baking parchment; spray with Pam and cook for 12-15 minutes or until golden.

Serve with Slimming World fries.
