Spiced Molasses Ginger Cookies

Ingredients:

  1. 2 cups - Sifted All Purpose Flour
  2. 2 teaspoons - Baking Soda
  3. 2 teaspoons - Ground Cinnamon
  4. 1 1/2 teaspoons - Ground Ginger
  5. 1 teaspoons - Ground Cloves
  6. 1 teaspoons - Salt
  7. 1/3 cups - Oil (Canola or Corn)
  8. 1/4 cups - Apple Sauce
  9. 1 cups - Brown Sugar Firmly packed
  10. 1 - Egg
  11. 1/4 cups - Dark Molasses
  12. - Ice Water & Sugar

Directions:

Sift first 6 ingredients into a medium bowl. Using an electric mixer beat oil, applesauce and brown sugar. In a large bowl add egg and molasses to brown sugar mixture and beat until blended. Mix in dry ingredients. Refrigerate 1 hour.

Preheat oven to 350º, moisten with ice cold water. Roll dough into 1 1/4 inch balls and roll in sugar to coat. Arrange on cookie sheet approximately 2 inches apart. Bake until top springs back when touched. Let stand 1 minute. Transfer cookies to rack to cool. Store in airtight container.
