If you don't have buttermilk, substitute sour milk: Pour 4-1/2 teaspoons lemon juice or vinegar into a 2-cup glass measuring cup. Add enough milk to make 1-1/2 cups. Let stand 5 minutes before serving.

Ingredients:
- 1 3/4 cups - all-purpose flour
- 3 tablespoons - sugar
- 2 teaspoons - baking powder
- 1 1/2 teaspoons - apple pie spice
- 1/2 teaspoons - baking soda
- 1/4 teaspoons - salt
- 1/2 cups - finely chopped apple
- 1 - egg lightly beaten
- 1 1/2 cups - buttermilk OR sour milk see notes for sour milk
- 3 tablespoons - canola oil
- 1 teaspoons - vanilla
- - butter optional, for serving
- - maple syrup optional, for serving
Directions:
Stir together flour, sugar, baking powder, apple pie spice, baking soda and salt in a large bowl. Stir apple into flour mixture.
In another bowl use a fork to combine egg, buttermilk, oil, and vanilla. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If batter is too thick, add a little additional buttermilk.
Pour about 1/4 cup batter per pancake onto a hot, lightly greased griddle or heavy skillet. Spread batter if necessary. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown; turn over when surfaces are bubbly and edges are slightly dry.
Serve warm. If desired, top with butter and syrup.
