Speedy Spinach Quiche

Ingredients:

  1. 1 tablespoons - butter
  2. 1 - onion chopped
  3. 1 packages - 10 oz. frozen spinach drained well
  4. 1 - pie crust 9-inch
  5. 1 teaspoons - flour
  6. 1/2 cups - Monterey Jack cheese
  7. 1/2 cups - Parmesan
  8. 4 - eggs
  9. 1/2 cups - cottage cheese
  10. 1/2 teaspoons - salt
  11. 1/4 teaspoons - pepper
  12. 1/8 teaspoons - nutmeg
  13. 1/8 teaspoons - dill

Directions:

Saute onion; add spinach. Cool.

Dust pie crust with flour. Place in quiche pan, floured side down. Sprinkle cheese over bottom. Top with spinach mixture.

Beat remaining ingredients together and pour over.

Bake for 50 minutes at 350 degrees F.
