Nice additions would be cilantro, jalapenos and/or shredded cheddar cheese sprinkled on top! We also like to crisp ours a little - so after it has simmered, turn up heat to medium-high and turn over several times to give it an oven-crisped effect. Delish! This is a large recipe and feeds my family of 9 with leftovers. It could easily be cut in half.

Ingredients:
- 5 tablespoons - Oil I use Coconut or Sunflower - but any will do.
- 1 1/2 cups - Onions chopped/diced
- 3 cups - White Basmati Rice
- 4 cups - Chicken Broth Beef Broth works just as well - gives it a more full/rich flavor
- 2 cups - Salsa (however hot you like it!)
- 2 tablespoons - Chili Powder
- 2 teaspoons - Cumin
- 2 cloves - Garlic
- 2 teaspoons - Salt or as desired
Directions:
Heat oil in large skillet to medium-high. Sautee onions and add rice until lightly browned, 5-10 minutes as desired. Turn heat to Lo. Add four cups of broth, salsa, garlic and spices. Stir well. Cover and Simmer around 20 minutes.
