Spaghetti with Bacon and Parmesan Brussels Sprouts

Ingredients:

  1. 12 ounces - spaghetti
  2. 1 pounds - small Brussels sprouts halved or quartered
  3. 1 cloves - garlic thinly sliced
  4. 1 tablespoons - olive oil
  5. pinchs - red pepper flakes
  6. - salt and pepper to taste
  7. 3 strips - bacon cut into 1/2-inch pieces
  8. 1/2 cups - grated Parmesan plus more for serving
  9. 1 - small lemon

Directions:

Heat oven to 425 degrees F. Cook pasta per package directions.

Meanwhile, on a large baking sheet, toss Brussels sprouts and garlic with oil, red pepper flakes and salt and pepper. Scatter bacon over top and roast for 15 minutes.

Increase heat to broil; sprinkle sprouts with 1/4 cup Parmesan cheese and toss to combine, then broil on top rack until bacon is crisp and sprouts are golden brown and tender (1 to 2 minutes).

When pasta is done, reserve 3/4 cup cooking liquid, drain pasta, and return to pot. Finely grate lemon zest onto pasta, then squeeze in juice from the lemon and toss to coat.

Toss with remaining Parmesan cheese, adding some reserved cooking liquid if pasta seems dry. Serve Brussels sprouts mixture on spaghetti with additional Parmesan, if desired.
