Number of Servings:
Ingredients:
- 1/4 pounds - butter
- 1 1/2 pounds - turkey tenders or breast meat
- 1 1/2 cups - masa harina
- 2 tablespoons - chili powder
- 2 teaspoons - cumin
- 1 cups - sweet yellow onion
- 1 cups - celery
- 1 cups - red bell pepper
- 1 cups - corn kernels
- 14 ounces - fresh or canned green chilies
- 4 cups - chicken broth
- 4 cups - water
- 1 1/2 tablespoons - garlic
- 2 cans - black beans
Directions:
Place a 4-6 quart soup pot on high heat and add butter. When butter starts to brown, add turkey chunks and stir until turkey is white on all sides and starting to brown.
Add masa harina, chili powder and cumin. Add all raw vegetables, corn and green chilies and stir over high heat for two minutes.
Add chicken stock and water and whisk well for 1 minute. When chili starts to boil, reduce heat, add beans and garlic, then simmer for 25 minutes, whisking every five minutes to prevent scorching.
