Ingredients:
- 1 heads - romaine lettuce
- 1 cans - 15 oz. black beans rinsed and drained
- 1 - large orange bell pepper
- 1 pints - cherry tomatoes
- 2 cups - corn thawed, if frozen
- 5 - green onions
- 1 cups - loosely packed cilantro stems removed and roughly chopped
- 1/2 cups - plain Greek yogurt
- 2 tablespoons - fresh lime juice (about 1/2 lime)
- 1 cloves - garlic or 2 cloves, if desired
- 1/4 cups - olive oil
- 1 1/2 teaspoons - white vinegar
- 1/8 teaspoons - salt
Directions:
Salad: Finely chop romaine, bell pepper, tomatoes and green onions. Place all ingredients in a large bowl and mix to combine. Toss with desired dressing.
Dressing: Puree all dressing ingredients in a blender or food processor until smooth; taste and adjust seasonings, if necessary.
