Southwestern Chopped Salad with Cilantro Dressing

Ingredients:

  1. 1 heads - romaine lettuce
  2. 1 cans - 15 oz. black beans rinsed and drained
  3. 1 - large orange bell pepper
  4. 1 pints - cherry tomatoes
  5. 2 cups - corn thawed, if frozen
  6. 5 - green onions
  7. 1 cups - loosely packed cilantro stems removed and roughly chopped
  8. 1/2 cups - plain Greek yogurt
  9. 2 tablespoons - fresh lime juice (about 1/2 lime)
  10. 1 cloves - garlic or 2 cloves, if desired
  11. 1/4 cups - olive oil
  12. 1 1/2 teaspoons - white vinegar
  13. 1/8 teaspoons - salt

Directions:

Salad: Finely chop romaine, bell pepper, tomatoes and green onions. Place all ingredients in a large bowl and mix to combine. Toss with desired dressing.

Dressing: Puree all dressing ingredients in a blender or food processor until smooth; taste and adjust seasonings, if necessary.
