Southwest Tacos

Ingredients:

  1. 3 1/2 pounds - pork roast
  2. 1 cups - water
  3. - salt and pepper
  4. 1 tablespoons - olive oil
  5. 1 - green pepper chopped
  6. 1 - onion diced
  7. 1 cloves - garlic minced
  8. 1 cups - tomato sauce
  9. 1 - bay leaf
  10. - salt to taste
  11. 1/2 cups - dry white wine
  12. 1/2 teaspoons - cumin
  13. 1 teaspoons - chili powder

Directions:

Place pork roast in large pan with water and salt and pepper. Simmer for 2 hours until easily shredded. Shred.

Meanwhile, saute green peppers, onion, and garlic in olive oil. Stir in tomato sauce, salt, bay leaf, white wine, cumin, and chili powder. Cover and let simmer for 30 minutes.

Combine sauce with shredded pork roast and mix well.

Serve in taco shells or taco salad.
