Southwest Style Tilapia

Ingredients:

  1. 3 tablespoons - Ottavio Gran Reserve Spanish Olive Oil
  2. 4 whole - Tilapia or other Whitefish fillets
  3. 4 tablespoons - Adam's Reserve Southwest Rub
  4. 1 cans - Diced tomatoes, onions, celery
  5. 1/4 cups - Fresh cilantro Finely chopped

Directions:

In lrg. skillet preheat the olive oil over med. high heat. Season the tilapia fillets w/ the Southwest Rub. Add the tilapia fillets and cook on each side for 4-5 min. Add in the can of tomatoes, onions & celery and allow to simmer for 4-5 in. Garnish w/ chopped fresh cilantro.
