Ingredients:
- 1 packages - taco seasoning mix
- 1/4 cups - olive oil
- 1/4 cups - lemon juice
- 1/4 cups - water
- 1 1/2 pounds - boneless chicken breast
- 8 cups - salad greens
- - assorted toppings: sour cream, salsa, shredded cheese, sliced black olives, sliced avocado, black be as desired
Directions:
Mix together the taco seasoning mix with the lemon juice, olive oil and water and place into a large resealable plastic bag or glass dish with the boneless chicken breasts. Turn to coat the chicken well, and refrigerate 30 minutes or longer.
Remove chicken from marinade and discard any extra marinade.
Broil or grill the chicken over medium-high heat for 6 to 7 minutes per side or until chicken is cooked through, turning frequently.
Cut chicken into thin slices. Divide 8 cups salad greens evenly among serving plates.
Top with sliced chicken. Serve with assorted toppings, as desired.
