Ingredients:
- 1 1/4 pounds - whole dressed skinned catfish
- 1/4 cups - white self-rising cornmeal
- 1/4 cups - all-purpose flour
- 1/8 teaspoons - cayenne pepper
- 1/2 teaspoons - salt
- 1/4 teaspoons - white pepper
- 1 - egg, beaten
- 2 tablespoons - milk
- 1/2 cups - vegetable oil
Directions:
Coat catfish with mixture of cornmeal, flour, cayenne pepper, salt and white pepper. Dip fish in mixture of egg and milk; coat again with cornmeal mixture.
Heat fry pan at 300° F. Add 1/4 cup of oil and fish; cook, covered, until golden and no longer pink in the center, 10 to 12 minutes on each side, adding more oil if necessary.
