Southern Style Fried Catfish

Ingredients:

  1. 1 1/4 pounds - whole dressed skinned catfish
  2. 1/4 cups - white self-rising cornmeal
  3. 1/4 cups - all-purpose flour
  4. 1/8 teaspoons - cayenne pepper
  5. 1/2 teaspoons - salt
  6. 1/4 teaspoons - white pepper
  7. 1 - egg, beaten
  8. 2 tablespoons - milk
  9. 1/2 cups - vegetable oil

Directions:

Coat catfish with mixture of cornmeal, flour, cayenne pepper, salt and white pepper. Dip fish in mixture of egg and milk; coat again with cornmeal mixture.

Heat fry pan at 300° F. Add 1/4 cup of oil and fish; cook, covered, until golden and no longer pink in the center, 10 to 12 minutes on each side, adding more oil if necessary.
