Southern Baked Yellow Squash

Ingredients:

  1. 3 pounds - yellow summer squash cut into 1 inch cubes
  2. 1/2 cups - dry bread crumbs
  3. 1/2 cups - onion chopped
  4. 2 - eggs
  5. 1/4 cups - butter melted
  6. 1 tablespoons - white sugar optional
  7. 1 teaspoons - salt
  8. 1/2 teaspoons - black pepper
  9. 1/4 cups - butter melted
  10. 1/4 cups - dry bread crumbs
  11. 1/2 cups - red, green or banana peppers chopped (optional)

Directions:

Preheat oven to 375 degrees. Grease a 2 quart baking dish.
Cook squash, covered with water until just starting to soften - about 10 mins. Drain
Mash until slightly chunky.
Stir together all ingredients except the second bread crumbs & melted butter . Spread into baking dish.
Mix 1/4 cup bread crumbs with 1/4 cup melted butter & sprinkle over casserole.
(Optional: May mix some Parmesan cheese with this topping)
Bake until casserole is cooked through & top is golden brown about 1 hour.
